One of our recipe hits this week was Chicken Souvlaki. Some red onion, zucchini, and chicken marinated in lemon, garlic, oregano, and a bit of olive oil, then cooked down in the skillet.
We served ours in toasted whole wheat pitas with a cucumber, tomato, lemon, and feta Greek salad.
Healthy, homemade tzatziki sauce (Greek yogurt, lemon juice, shredded cucumber, garlic, salt and pepper) made the pitas taste really creamy, without weighing down the meal.
And the best part is that my Sous Chef was home from job #1 early enough to show up ready to work at job #2. Such an excellent chopper :)
